Thursday, November 12th is the day of the Lavradores de Feitoria wine dinner in Lisbon. The chosen venue is the restaurant Bistro4 and this is a special event as it marks the return of wine nights to the hotel Porto Bay Liberdade . A parade of seven Douro wines, in a tasting commented by winemaker Paulo Ruão and which will be accompanied by a delightful menu designed by chef João Espírito Santo, under the baton of Michelin star Benoît Sinthon, the restaurant's consultant.
The start is scheduled for 7:30 pm with a welcome drink featuring a trilogy of white, rosé and red wines from the brand 'Lavradores de Feitoria'. There will be two whites and two reds on the table: Meruge, Três Bagos Sauvignon Blanc, Quinta da Costa das Aguaneiras and Três Bagos Grande Escolha. The order is as follows and deviates from the conventional in two aspects: we start with Meruge, which is a more structured and complex wine – a so-called “winter white” –, followed by 'Três Bagos Sauvignon Blanc', which is fresher and more explosive on the palate; and we finish with a dessert accompanied by a red wine. Proof that wine and food are not a science, but an experience. In a team effort between Bistrô4 and Lavradores de Feitoria, the pairings dictated the wine lineup.
To start, a 'Chef's Mixed Snacks' which, by including octopus, cod and slightly stronger condiments, calls for a wine with structure. As for the main courses, the first is a 'Fish of the day in a gremolata crust with gnocchi and seasonal vegetables', which, with a sauce with very vegetal and slightly citrus aromas, pairs perfectly with the 'Três Bagos Sauvignon Blanc' from 2014. The meat follows with a 'Veal cheek confit', served with stewed lentils and accompanied by 'Quinta da Costa das Aguaneiras 2011', a terroir red with the typicality of the Douro combined with the elegance that Lavradores de Feitoria gives to its wines. To finish, a chocolate dessert – 'Choc Snick Ben' – with the top of the range from this innovative Douro project, the 'Três Bagos Grande Escolha', presented here in its latest harvest, that of 2009.
